Spring desserts: Rhubarb crumble cake

Our final spring desserts is definitely one to get excited about. Mixing the classic favourite rhubarb crumble with cake! Try our simple recipe to enjoy tasty rhubarb crumble cake and share with everyone in your class. You can do this at home after the school day to bring in for your pupils, or even get your pupils help, if possible and create one in class.

 

Ingredients:

  • 250g caster sugar
  • 250g butter, softened
  • 2 tsp vanilla extract
  • 300g self-raising flour
  • 5 large eggs
  • 1tsp cinnamon
  • 300g rhubarb, washed, trimmed and sliced thinly

Step one

Preheat the oven to 160C/140C fan and grease the base and sides of a deep round cake tin with a little butter. Mix the butter, 250g sugar and vanilla extract in a big mixing bowl until light and fluffy.

Step two

Beat in the eggs, one at a time, then fold in the 300g flour. Spoon 85g of the batter into a separate bowl and stir 7 extra tablespoons of flour and the cinnamon into this. Use a cutlery knife so it becomes crumbly.

 

Step three

Fold the rhubarb into the rest of the cake batter and scrape into prepared tin. Scatter over the crumble mix followed by 1 tablespoon extra sugar.

Step four

Bake for 1 hour 15 minutes, until a skewer or knife inserted comes out clean. You may need to lay a sheet of foil after an hour if the cake is browning too much. Cool for 15 minutes in the tin and then cool further on wire tray.

 

Step five

Cut and transfer to a cake stand for everyone to enjoy. Serve with ice cream, cream, fruits (strawberries) or on its own.
