Spring desserts: Easter egg cookies

Now Springs arrived, it’s the perfect time to bake some amazing spring desserts. As Easter is around the corner, we are kicking these dessert recipes off with some delicious Easter egg cookies. These are perfect to do for the last day of term or during the holidays. Follow our step-by-step guide and enjoy making a little Easter treat.

 

Ingredients:

  • 175g butter, softened
  • 100g caster sugar
  • 200g light brown soft sugar
  • 1 large egg
  • 250g plain flour
  • 100g white chocolate
  • 100g milk chocolate
  • ½ tsp bicarbonate of soda
  • 50g mini eggs, crushed
  • 100g crème eggs, crushed
  • 1 tbsp vanilla extract

How to create these tasty cookies:

Step one:

Heat oven to 190C/170C fan. Line baking trays with baking parchment and set aside for later use.

 

Step two:

Whisk the butter, sugars and vanilla extract in a large bowl until pale and fluffy. Add in the egg and beat again. Pour the flour and bicarbonate of soda into the mixture and fold in with a spoon.

 

Step three:

Scatter in the crushed mini eggs and crème eggs, leaving half of each whole for decoration. Mix with a spoon until everything is combined.

Step four:

Scoop small mounds of the mixture into a ball and place on baking trays. Make sure to leave decent spaces in-between each cookie (you should fit 4-6 balls of mixture on one tray). Push the remaining mini eggs and crème eggs into the top of the cookies.

To make 20 cookies, you will need to cook them in batches.

 

Step five:

Bake the Easter egg cookies for 15-18 minutes, swapping the trays halfway through. Cookies should be golden around the edges and pale in the centre. If you want more of a crunch, bake a little longer

Step six:

Remove from the oven and leave to cool for 10 minutes. Transfer into a large Tupperware box or wire rack and start the next batch. Repeat until all the mixture is baked.

If you don’t want to batch cook, you can freeze the remaining mixture for up to 3 months and defrost thoroughly before baking.

Replicate these cookies with a twist

If you want to create these cookies with a twist you could swap the chocolate for other ingredients to make them however you want. You could add in chocolate eggs and banana or Terry’s chocolate orange eggs with orange zest. Create any mix you want to make the perfect Easter cookies for you.
